Summer in Recession Rolls

These dip-able salad rolls are inexpensive, healthful and the perfect light dish for the desert heat. All ingredients can be purchased at 17th Street Market, 840 E. 17th St.

Ingredients:
(Amount determined by number of rolls. Wing it.)
Avocado
Carrots
Cream cheese
Cucumber
Peanuts
Red cabbage
Red leaf lettuce
Sesame oil
Rice seasoning (salt, sugar, black sesame seeds)
Rice papers

The Sauce:
(Equal parts and mix)
Chunky Peanut Butter
Soy Sauce
Sesame Oil

Directions:
Peel and thinly slice carrots, cucumbers; thinly slice red cabbage. Place together in a large bowl. Add peanuts, 1 tablespoon of sesame oil and 1 teaspoon of rice seasoning. Slice avocado and cream cheese. Fill another large bowl with cool water and individually submerge and soak each piece of rice paper for about 15 seconds. Remove, air dry and position evenly on a flat surface. Place on it one large lettuce leaf, add a large pinch of vegetable mix, a slice of avocado, followed by a bit of cream cheese and topped with more vegetables. Roll it up and fold in the ends. Dip the rolls in the sauce and enjoy the sultry nights.

Sounds delicious! I might put these together today. I've got nothing to do this sunday. Or maybe I'll put them together for the super bowl next week.
